Watermelon Rind Pickles

Pickling watermelon rind is an old “nose to tail” tradition in the American South. When food is less abundant, cooks get creative and use every part of an animal or piece of produce. This usually leads to wonderful new culinary traditions, and Watermelon Rind Pickles are no exception.

Traditionally, the rinds are candied with a good bit of sugar. For ours, we’ve dialed back the sugar and added white wine vinegar, black peppercorns, and star anise for a balance of flavor.

They are perfect in tuna salad, as a garnish to deviled eggs, or in a Bloody Mary. Add them to a charcuterie plate and as a tasty alternative to ordinary pickles. Or, chop them and add to the top of a salad with feta cheese. However you use them, you’re sure to enjoy these tasty creations!
